This fruit elongated about 18 cm long is consumed in immature state at which presents a color which varies depending on the variety, from green to yellow or purple. It tastes like eggplant and has a texture very mucilaginous.
This vegetable cooked normally consumed in combination with eggs, potatoes or other vegetables, although we use raw salads. Can also be used for making soups and stews or roasted consume (in this case from the liquid slime). In some areas and roasted seeds are used as coffee substitute.
