There are different varieties (over 1,400), but the genre of Beta vulgaris is classified into two varieties:
Yellow Lyon.
Green Bressane white stalk.
They can be eaten all year round, but the best time is in the fall and winter.
When purchasing, it is critical that they are very fresh, ie very green leaves, shiny, smooth, no pitting or staining, very stiff fronds.
