Celery is a thick stem, hollow, grooved and comprises elongate stalks cylindrical, longitudinally traversed by a deep groove, of which numerous leaf spring with parsley-like appearance.
If it grows naturally, the leaves take on a color ranging from yellowish green to dark green. If appropriate culture, generally bleached during the final stages of growth.
To choose a quality fresh celery is one of lustrous appearance, thick stalks or petioles, compact, firm, crisp and light green, with green leaves, fresh or slightly wilted. Should be discarded soft celery, with spots and dry spots, with stems or branches over white
